MACKREL PATE
Makes 22 portions                  

Ingredients 
1kg smoked mackerel500g sour cream
500g soft cheese2 lemons
500g butter 


Method
* Separate  and flake mackerel from skin and bone
* mix by hand with sour cream  cheese zest and juice of two lemons
* Melt butter microwave 2 min full power
* pipe 90g mackerel into very clean jars. Tap out the air
* seal with as small amount of butter as possible ,The mackerel must be covered.
* Put on clean jar lid and label with seven day time date


To serve
Serve on an oblong plate, remove lid and label from jar.

NACHOS                         

Ingredients 
300g tortilla chips100g grated cheese
75g nacho meat – omit if veggie version20g sliced jalapenos
50g sour cream50g aioli
50g tomato relishBullshit – spring onions & chilis
  
  
 


Method
* Put tortilla chips in bowl, cover with cheese, jalapenos and meat if using
* Microwave for XX
* Put the dips on the top – 3 blobs
* Sprinkle bullshit on top. To serve
In a large brown bowl. 


Grilled Oysters

6 Oysters
Garlic Butter
Bread Crumbs
Tarragon
Lemon to garnish

Put on grill to heat up 
Arrange six opened oysters on a tray (pour out liquor) 
Put two tarragon leaves on each oyster small amount of garlic butter on each oyster cover with breadcrumbs 
Grill until breadcrumbs go golden
